Perfect beef tenderloin

Equipment/tools:

Cutting board, small knife, broiling pan

Recipe:

Salt, pepper, beef tenderloin

Notes: 

do not, do not open the oven until 60 minutes is up.

Trim and dry-brine with salt and pepper, allow to sit covered in the refrigerator for at least 2-8 hours. Cover with raw onion if you're feeling extravagant. Preheat oven to 500 degrees.

Rare: 15 minutes
Medium rare: 20 minutes
Well done: 25 minutes
Like an old shoe: 25+ minutes

Turn off the heat and leave untouched in the oven for one hour.
